One of the winter projects we have embarked on is making blueberry wine vinegar. We start by making wine out of blueberries from the farm. Next we inoculate it with a vinegar culture which converts the alcohol into vinegar. Lastly it is aged for a year in French oak to condition the vinegar before we bring it to farmers market. This photo is of the final stage of the wine fermentation.
